西元1720年開始，英國出現了現在流行的茶——紅茶加上牛奶和糖。在那之前，英國和歐洲流行的是從中國引進的綠茶，英國則率先透過倫敦的咖啡廳販售。直到18世紀，糖開始進口後，紅茶加上牛奶和糖的風潮，取代了英國人嗜綠茶的習慣。</div>

幾世紀前，從醫藥和健康角度飲綠茶的觀點，來杯茶（Cuppa）、約喝下午茶的習慣逐漸演變成近代社交的文化觀點。然而，2016年的現代英國人，喝茶比例已不如從前。現在英國人的下午茶或社交飲料，改成刺激性和口味較強的咖啡，每天至少都會來上一、二杯咖啡。是什麼原因讓英國人從每天至少三、四杯茶（紅茶加牛奶），變成平均每週兩杯茶不到？</div>

從英國國家食物研究（National Food Survey）最近的調查可看出，英國人對茶的熱愛，從七〇年代就開始消退；二戰之後是喝茶高峯，現在英國年輕人（16至4歲）喜歡喝茶的比率僅有戰後嬰兒潮人口的一半；調查中發現50歲以上的受訪者，仍然保有飲茶習慣，每天平均3杯以上，對照另一份調查“YouGov”的統計，50歲以上的英國人，一年平均喝下876杯茶，相當於兩個浴缸容量！</div>

英國人變得不愛喝茶，可能的原因還有口味的差別與“心裏感受”上。咖啡入口滋味濃烈，就像咖啡因作用，短暫卻刺激，反觀茶，在口味上和心理上，則讓人感覺家一樣，舒適溫和；雖然有些英國人在身體不適時，還是會想來杯茶，然而考量紅茶咖啡因過高，平淡的口味，也讓人感到無聊。</div>

20世紀的英國喝茶文化，則受到美國發明瞭“茶包”的影響，方便又快速。茶包的大量銷售，瞬間讓茶公司進帳不少，至今各種品牌茶包，仍佔據家家戶戶廚櫃（只是喝的次數變少了），茶包占有超過96%的市場。只要按下熱水壺開關，丟進茶包，倒下熱水，再加入牛奶，些許糖（現代英國人喜好紅糖，Brown Sugar；大部份也不加糖），濃一點一杯茶，兩分鐘就好。</div>

只是茶包，讓茶的品質大幅降低，平價或超便宜的茶包品牌，可能含有劣質茶葉，甚至只是茶葉碎片或粉末，也因爲一個茶包減少了茶葉需要攝取容量（大約3克），茶包則是零售好銷貨。當然，也沒人假裝自己平常喝的是什麼高等茶。</div>

英國有機超市或較高價位超市（如Waitross或Mark&Spencer），有幾項茶包品牌除了經典紅茶種類（經典早餐茶、伯爵茶、大吉嶺、阿薩姆等），薄荷茶、南非國寶茶（Rooibush）、印度香料茶（Chai）、或是洋甘菊茶或石榴茶，也以健康訴求主打，主攻超市對應的客層。</div>

美國心臟協會3月最新研究，雖然紅茶咖啡因也不低，然而茶葉中的茶單寧抗氧化劑高，適量的茶飲（和少量或不加糖），可以減少心血管疾病風險。</div>

想要泡出好喝的英式奶茶，究竟先加牛奶還是紅茶？這個問題連日本人都非常考究和疑惑，除了紅茶牛奶香，英國人的“正確泡茶、泡出好喝的茶”，必須先加進牛奶。步驟如下：</div>

步驟一：水，以軟水爲主。英國自來水需要過濾後纔算軟水；礦泉水不算！</div>
<div>
</div>

步驟二：過濾後的水加進熱水壺，同時另外將紅茶壺加熱（相當臺式飲茶的熱壺。加上至少四分之一高的水，以微波爐加熱、或滾水熱壺。避免使用鐵壺，使用陶瓷茶壺較能保有茶葉香氣）。</div>

步驟三：水滾之後，只要加進一茶匙左右（約2克，不必太多）茶葉，在此不使用茶包，整包裝茶葉有較高濃度的茶單寧。倒進滾好的水，等候3分鐘。</div>

步驟四：使用自己心愛的茶杯、馬克杯。先倒進適量牛奶在杯中，以冷鮮乳爲主，不需加熱。牛奶先待在杯中的原因，是由於牛奶若倒進高於75度以上的熱茶中，倒進過程的奶滴（中的奶蛋白），隨即遭到高溫破壞；嚐起來就是不如熱茶加入牛奶的好喝（密集的奶蛋白，奶蛋白破壞過程較慢）。</div>

步驟五：熱紅茶倒進牛奶中，顏色愈深紅茶濃度高，愈淡則奶味較濃；最後可依個人習好加入糖量。</div>

雖然喝茶文化式微，今年2月英國反糖計畫基金會調查時下咖啡連鎖店咖啡飲品，含糖量驚人；健康意識漸漸抬頭的英國人究竟會不會重拾茶包，讓平淡的茶飲重振帝國雄風呢？</div>
