	　　經常有人問到：什麼纔是精品咖啡?精品咖啡與一般的咖啡有什麼不同?它的特別之處在哪裏呢?</p>

	　　籠統地說，所謂精品咖啡就是一杯品嚐起來具有良好風味特徵特性的咖啡飲品。</p>
<p>
	　　市面上可見的一些咖啡豆，比如：藍山、夏威夷科納、摩卡瑪妲莉等，其咖啡豆的附加值特別高的一點就是：具有好風味特性，不過，這些咖啡一般被稱爲&ldquo;高級咖啡豆&rdquo;，與所要描述的精品咖啡全然不同。</p>

	　　實際上，關於&ldquo;精品咖啡&rdquo;本身，並沒有太過精確的定義和解釋。精品咖啡這一概念始終都保持着模糊、含糊和能夠自由解釋的性質。對於消費者來說，精品咖啡便是喝咖啡的人杯中的咖啡，液體風味美妙絕倫，並能夠獲得消費者好評且能夠讓品用咖啡的人非常滿意的一杯咖啡咖啡。而風味美妙絕倫的咖啡，指的是風味具有能夠讓人銘記的顯著印象;在飲用時擁有豐富的感受，清爽、明快的酸味等等特徵，隨後在口中逐漸變成甘甜味道直至消失。</p>
<p>
	　　所以爲了保證一杯精品咖啡的產生、爲了保證杯中咖啡的風味美妙絕倫，從咖啡豆的挑選到盛入杯中咖啡的所有階段必須貫徹統一的制度、工序、品質管理。</p>
<p>
	　　雖然這個過程在不同的地區或者國家各有差異，但這也並不意味着對於精品咖啡的認知不存在共識。想要被評定成爲精品咖啡必須具備幾個重要資質：其中一項就是咖啡豆必須具有明確的&ldquo;追蹤性&rdquo;，也就是說，咖啡豆必須舉報明確的&ldquo;生產履歷&rdquo;，能夠清楚地知道咖啡豆產於哪個國家、哪個地區、哪個莊園。還有一項叫&ldquo;香味鑑定&rdquo;，也就是所謂的杯測，類似於葡萄酒中的品酒性質。總的來說，如果不具備明確的可追蹤性和未通過香味鑑定資格的咖啡，便無法稱得上是&ldquo;精品咖啡&rdquo;。</p>
