藍山咖啡能夠保持今天的極品地位，也與當地的經營政策密不可分。1932年，牙買加通過了鼓勵咖啡生產的政策，減少島上對糖出口的依賴。當地政府並沒有像大多數咖啡生產國那樣，爲了提高產值，大量種植產量高品質較差的咖啡，而是以品質爲優，寧可犧牲咖啡的產量，也要保證藍山咖啡的品質。所以，牙買加目前是世界上咖啡生產量較少的國家之一。世界上最大的咖啡出口國巴西，每年要生產3000萬袋咖啡，而藍山咖啡每年僅生產4萬袋左右。</p>
<p>
另外，藍山咖啡的加工製作也非常考究。加工、烘焙、包裝等都制定了嚴格詳細的標準，具體到成長期需要使用什麼有機肥料都有規定。收穫時全部人工採收。牙買加也是最後一個仍使用傳統木桶包裝運輸咖啡的國家。</p>
<p>
只有經過牙買加咖啡工業局規定的這一系列苛刻的標準鑑定，咖啡才能獲得政府頒發的保證書，正式冠以"藍山"的名稱。</p>
