9日，阿里巴巴旗下的24小時無人超市開業，沒有收銀員，智能機器自動識別扣款，顧客可以即拿即走。據稱，未來幾年，阿里將和娃哈哈集團合作，將在全國開出10萬家無人超市。隨後，京東也宣稱要進軍無人超市領域。藉助“黑科技”，新業態零售發展迅猛，傳統超市該如何應對？</p>

“機器是冰冷的，人是溫暖的，一切有溫度的服務，都是不可取代的。”蘇果超市總經理陳兵說，爲了應對挑戰，蘇果的100多家大賣場都要推行“生鮮餐飲化”變革。“顧客在大賣場內購買的三文魚、牛肉、龍蝦等生鮮食材，可在賣場現場加工，在專門的堂食區就餐或打包外帶回家。”</p>

今年以來，這樣的變革越來越流行。上月底，百聯集團的RISO首店在上海開業，該店主打“餐飲+生鮮+書店”融合模式：一層基本都是生鮮食品，可以請大廚現場加工，也可半加工帶走；二層則結合餐飲和書店。永輝的超級物種“盒馬鮮生”也相繼推出生鮮餐飲化模式，而大潤發的新零售大賣場“飛牛優鮮”也將在本月開業。</p>

在這些門店裏，消費者喝着咖啡就把菜買了，聽着音樂就把飯喫了。傳統超市爲何走起這樣的“混搭風”？中國連鎖經營協會此前發佈的“2016年行業基本情況及連鎖百強”榜單顯示，去年連鎖百強銷售規模2.1萬億元，同比增3.5%，爲有統計以來最低的一年。傳統零售陷入低谷，打出“新零售”概念的新型門店開始湧現，因爲這樣的業態混搭給他們帶來了零售業最爲重視的人流量。</p>

具備實體優勢的傳統零售商們紛紛開始嘗試新業態，希望藉此帶動企業的活力。在蘇果“生鮮餐飲化”試點門店，“加工區、餐飲區面積約達500平方米，包括現場製作日式、韓式炒飯，海鮮BBQ，水果蔬菜色拉，煎炸食品等，滿足部分消費者即時消費、即時享用的需求。”陳兵說，“蘇果計劃通過3年時間，實現基地直採佔比達七成。目前，蘇果農超對接的直採基地已超100家。”年內，蘇果還要在南京開出全新的社區業態店——生鮮加強型社區超市，規劃面積1000平方米，50%以上都是生鮮商品。首家門店試點成功後，蘇果旗下的社區超市、生活超市都將陸續改造成生鮮加強型超市。</p>

在RISO門店，餐飲、生鮮佔比達75%，設有早餐、午餐、下午茶和深夜食堂。店內還爲個性獨立的白領推出一人餐“如宴”，“就算孤單一人，無論成功挫敗，也要有如宴的儀式感來犒賞自己。”百聯全渠道COO張申羽稱。而在聯商網零售研究中心主任周勇看來，“盒馬鮮生”是一個顛覆傳統的“四不像”——你說他是店商，他很像電商；你說他是電商，其實他是店商；你說他是超市，他做的是餐飲；你說他是餐飲，他還真的不是做餐飲的。</p>

超市生鮮餐飲化的變革，說到底是爲了迎合消費者需求。消費者李明霞說，家裏沒請鐘點工，每天早上至少提前半小時起牀，把晚上的菜一一洗摘好。“如果在家門口超市就能解決晚餐問題，那就太方便了。”而就在南京，瞄準市民晚餐需求的“雲廚一站”，已悄然開出100多家體驗店。“體驗店採取會員制，居民直接到店購買食材，也可以在微信上下單，工作人員將蔬菜送到居民家中或是指定門店。”永鴻集團相關負責人介紹。</p>

7月3日，商務部發布《中國零售行業發展報告》指出，今年，互聯網、大數據、雲計算等信息技術應用更加普遍，居民消費需求深刻變化，催生零售行業新供給新模式。業內人士稱，將零售和餐飲有機結合是零售業探索新零售的一種有益嘗試，這也是零售業發展的新趨勢。零售除了和餐飲有機結合，還可和其他業態融合。應對機器的挑戰，傳統超市必須變得更有“溫度”，加大引進功能性社區服務業態，比如干洗服務、藥店、維修、培訓、寵物店、家政服務類等，讓大賣場融入社區消費者家庭生活，以此增強顧客黏性。本報記者 宋曉華</p>
