	　　質館咖啡怎麼沒有WiFi？震懾於這位大牛在廣告界的赫赫聲名，咖sir相信自己用了足夠多的小心翼翼。</p>
<p>
	　　這問題是在等他的時候設計好的，畢竟WiFi算得上咖啡館的標配。但他似乎覺得問題無厘頭：</p>
<p>
	　　不要用其他咖啡館的標準來衡量質館，咖啡界只是有質館跟其他。</p>
<p>
	　　這位得過最佳着裝獎的花樣爺爺，身着長衫，不苟言笑，臺北口音。霸道總裁的即視感不斷的向咖sir大腦發起降維攻擊。</p>
<p>
	　　所幸，一杯咖啡及時出現扭轉了局面。</p>
<p>
	　　一杯咖啡的尊嚴</p>
<p>
	　　上海新天地的這家質館咖啡，開在樓角的位置。一個旋轉樓梯連通上下2層。下午的陽光斜照在桌子上。一張產品單，覆蓋了大半張桌子。</p>
<p>
	　　他看了一眼單子，推薦咖sir喝一杯日曬燭芒。單子上，這款咖啡在美國咖啡質量研究所(CQI)的評分是87.25分。</p>

	　　一杯有分數的咖啡，恩......哦?</p>
<p>
	　　咖sir對分數的興趣，讓這位老先生光風霽月，不再追究咖sir關於wifi的&ldquo;愚蠢問題&rdquo;。</p>
<p>
	　　鄭松茂強調，精品咖啡不是一個形容詞，而是一個包含諸多技術標準的名詞。只有經過咖啡質量研究所CQI的Q coffeesystem系統評測，總分在80分以上的咖啡豆，才能稱作精品咖啡。</p>
<p>
	　　評測標準極爲嚴格，包括品種、生長環境、採收、挑揀、分級等11項之多。</p>
<p>
	　　給咖啡標註CQI評分，是鄭松茂制定精品咖啡這個品類標準的得意手段。</p>
<p>
	　　在質館，每一種精品咖啡都有咖啡質量研究所(CQI)發出的屬於自己的證書。</p>
<p>
	　　&ldquo;一杯精品咖啡來自60%的最高品質的咖啡生豆、30%的最好烘焙方式和10%的咖啡製作方式，我們按照這一標準意在把咖啡做到極致。&rdquo;他強調。</p>
<p>
	　　他不考慮店裏的WiFi和插座，但會因爲一杯咖啡擺放的方位細節而大發雷霆。</p>
<p>
	　　&ldquo;質館就是要很誠實的做一杯獨一無二的世界頂級咖啡。&rdquo;</p>
<p>
	　　在質館，一杯咖啡得到了足夠多的尊重&mdash;&mdash;</p>
<p>
	　　所售賣的每一款咖啡，都標有產地，甚至具體到莊園&mdash;&mdash;就像葡萄酒一樣。消費者可以清楚的知道，自己正在喝咖啡來自於哪個莊園，是什麼樹種，甚至於是由哪種方式精製而成;</p>

	　　每一款產品，都標註了由CQI評測的分數;</p>
<p>
	　　每款產品都標有由風味、果酸、乾溼香氣和餘韻等指標建立的座標系統，顧客可以看得到這杯咖啡在各個指標下的表現;</p>

	　　咖啡上桌，精緻的木質托盤上3個杯子。一熱一冷兩杯，來呈現咖啡在兩種溫度下的不同風味。另一小杯，則是用來品鑑香氣的咖啡粉。</p>

	　　咖sir看到這陣勢，不自覺的擺好了品鑑拉菲的心態。</p>

	　　一年1000店的野心</p>
<p>
	　　鄭松茂人稱&ldquo;臺灣廣告教父&rdquo;，創立的&ldquo;意識形態廣告&rdquo;在業界是執牛耳朵的角色。</p>
<p>
	　　轉行做咖啡，他的目標是要在國內開1萬家精品咖啡館，2016年目標是落地1000家加盟店。</p>
<p>
	　　坦白的說，這話從他口中說出來時，咖sir內心是拒絕的。</p>
<p>
	　　看組數字：同行業大鱷星巴克，在全球不過一萬多家店面。在中國，經營了16年纔到1600家店。即便近年加快開店速度，也不過一年300家的速度。</p>
<p>
	　　質館咖啡雖在業界頗有名聲，但目前只有6家直營店，5家加盟店，且都在上海一隅。</p>
<p>
	　　一年新開1000家店，人才、管理如何匹配?通常來說這麼大的步子，容易給下體帶來不適感。咖啡陪你，便是一個悲傷的註腳。</p>

	　　另一組數字：鄰國日本每人年均消費300多杯咖啡，這個數字在中國是4-5杯。</p>
<p>
	　　且不說這10000家是不是他表達自信的一種方式，單憑明年落地的1000家精品咖啡，即使在市場增容的情況下是否能被市場消化掉?</p>
<p>
	　　鄭松茂有他的獨特理解：</p>
<p>
	　　從自身來說，質館從成立以來就有商業上的野心，其公司架構剛開始便有24個部門之多。經過4年多的發展，鄭松茂認爲質館到了厚積薄發的節點。</p>
<p>
	　　從市場上講，未來5&mdash;7年，中國咖啡市場將迎來一個井噴期。數據顯示，中國咖啡市場近年年均增長近20%，是世界平均水平的10倍。</p>
<p>
	　　在他看來，星巴克宣佈將中國視爲它的全球第二大市場加速佈局，以及上海自貿區成立咖啡交易中心，這都是市場將迎來暴漲和井噴的信號。</p>
<p>
	　　快速開店，質館是在咖啡市場跑馬圈地，搶佔市場風口。</p>
<p>
	　　&ldquo;不要看不見中國市場，不要看不起三線縣城的消費能力。如果不趕在爆發期之前佔據市場建立護城河，那真的就是看不見、看不起、看不懂、來不及了。&rdquo;</p>

	　　嫁接O2O</p>
<p>
	　　令鄭松茂暗自興奮的是，星巴克已經在美國華盛頓、阿拉斯加等城市推出了APP線上預訂咖啡功能。</p>
<p>
	　　這與他謀劃的咖啡O2O實驗不謀而合。</p>
<p>
	　　在鄭松茂的設計中，未來這10000家咖啡館，是以美團、餓了麼等外賣平臺爲依託的O2O商業形態。</p>
<p>
	　　從地域上說，佈局打破一二三線城市，依託線上外賣平臺進行網點式佈局。</p>
<p>
	　　按他的構想，只要是互聯網線上平臺能到的地方，質館咖啡都可以到。你甚至可以在縣城喝到一杯頂級咖啡。</p>
<p>
	　　這10000家咖啡館，更像是覆蓋在互聯網外賣平臺上的10000個精品咖啡生產點。</p>
<p>
	　　從形態上說，小型精品化。相對於其他臺式咖啡館動輒500平以上的大店，質館目前最大的一家店在50平方，最小的只有12平方。</p>
<p>
	　　這種形態，既是快速擴張的需要，也是降低開店成本的有效辦法。</p>
<p>
	　　同時，蜂巢式佈局，店面雖多，物流配送成本卻低，且易形成品牌效應。</p>
<p>
	　　嫁接到O2O市場，在降低運營成本的同時，也可以降低咖啡售價。畢竟平均60元一杯的精品咖啡，對普通消費者來說並不那麼平易近人。</p>
<p>
	　　連鎖不復制</p>
<p>
	　　與一般連鎖企業不同，質館咖啡採取的是&ldquo;連鎖不復制&rdquo;的加盟策略。</p>
<p>
	　　連鎖，即產品、品牌連鎖。以咖啡爲核心的咖啡豆、咖啡機等供應物料，由總部統一管理配給。</p>
<p>
	　　爲了加強連鎖品控，質館在咖啡製作工藝上基本實現了標準化系統。</p>
<p>
	　　在這套系統中，沖泡咖啡的水溫、時長、咖啡與水的比例，諸多涉及烘焙和製作技巧的技術性操作，都實現了數據量化。</p>
<p>
	　　另外值得一提的是，質館放棄了代表逼格的半自動咖啡機，改用一套由瑞士一家公司專門爲星巴克研發的全自動咖啡機。</p>
<p>
	　　這臺價值12萬人民幣的機器，可以精準模仿人手的力度，減少人工干預的程序，將兩杯咖啡的品質差異控制到最低。</p>

	　　加盟商可以因地制宜，儘可能融入當地特色。比如在蘇州開店，店裏裝修可融入蘇繡、核雕等蘇州傳統文化元素。</p>

	　　這是同樣來自臺灣的誠品書店起死回生的最大祕訣。誠品幾乎從創辦開始便持續虧損了15年，直到摸索出這條&ldquo;連鎖不復制&rdquo;的加盟經營模式才扭轉局面，成爲實體書店的現象級符號。</p>
<p>
	　　鄭松茂這場聲勢浩大的咖啡O2O商業實驗，最終能否承載他對質館的商業野心?咖sir心裏沒有答案。</p>
