咖啡正在以平民化的價格滲透到越來越多人的生活中。北京商報記者調查發現，在便利店、烘焙店以及外資快餐品牌店中，銷售咖啡已然成爲標配，一杯平價化咖啡潛移默化地影響着中國消費者對咖啡的態度。來自北商研究院的分析顯示，咖啡市場從美系咖啡帶入的起步階段，臺系、韓系咖啡的培育期，走入上升期的細分市場中。</p>
<p>
平價咖啡來襲</p>
<p>
在快餐店、便利店、麪包店中，平價咖啡已逐漸成爲標配。在便利店中，全家的湃客、羅森的MACHI Café等現磨咖啡已鋪滿上海、重慶等地的門店中，臺系烘焙企業85度C的咖啡飲品更是超過飲品種類的1/2。</p>
<p>
這些咖啡界的新勢力還將咖啡由一杯小資飲品變爲平民化飲料，巴黎貝甜麪包坊中美式咖啡價格在18-20元，北京全時便利店推出的現磨咖啡價格在10元左右。在華貿中心負一層的美食街裏，部分麪包店銷售的早餐中的現煮咖啡價格再刷新低，僅售5元/杯。</p>
<p>
就連一些外資快餐品牌也在加入平價咖啡的陣營，必勝客最新推出的摩卡咖啡沙冰等咖啡系列飲品價格在19-21元，早餐、下午茶套餐中的咖啡飲品還可免費續杯。在肯德基、麥當勞當中，定價在15元左右的現磨咖啡，正潛移默化地影響着消費者對咖啡的接受度。</p>
<p>
北京商報記者日前在肯德基(富力廣場店)看到，多數消費者在購買早餐時都選用的是現磨美式咖啡，這樣的場景同樣發生在通州貴友、和平里西街等店。今年1月，肯德基現磨咖啡強勢進京，在北京超過300家餐廳開賣，產品價格定10元起。麥當勞則更早地推出了現磨咖啡品牌麥咖啡。</p>
<p>
必須進入領域</p>
<p>
咖啡市場正處於高速上升階段，但對於增設咖啡這類業務企業卻很理性。北京商報記者瞭解到，烘焙企業與便利店將咖啡銷售視爲重要的副業。在巴黎貝甜、味多美、原麥山丘等麪包店中，咖啡雖然是標配，但在商品品類中還不是最重要位置。北京商報記者在巴黎貝甜陽光上東店看到，不少國外消費者都習慣點上一杯咖啡作爲甜點的搭配飲品。巴黎貝甜相關負責人表示，咖啡可以中和甜品的口感，很多消費者喜歡將咖啡和麪包、甜品搭配。上述負責人還表示，咖啡有時也是知性的象徵，深受都市白領喜歡。另一位烘焙企業相關負責人表示，麪包坊銷售咖啡並非主業，星巴克會銷售吐司和甜點，麪包坊銷售咖啡也是爲了滿足消費者多元化的選擇需求。</p>
<p>
不同於便利店、麪包店對咖啡業務的態度，外資快餐品牌則把咖啡當成一門重要的事業經營。一位肯德基工作人告訴北京商報記者，按照公司規定，如果消費者菜單中沒有咖啡飲品，員工需要主動推薦。肯德基品牌企劃副總裁何勇曾公開介紹，今年肯德基將在不少於20個城市的1000家餐廳陸續推出現磨咖啡系列。與肯德基同屬百勝餐飲集團旗下的必勝客，在香港還開出概念店“Pizza Hut Super Delco”，主打薄餅、三明治、咖啡等產品，進一步佈局咖啡市場。比肯德基更早進入咖啡領域的麥當勞打造了獨立的“麥咖啡”品牌，以店中店形式存在。</p>
<p>
能否逆襲前輩</p>
<p>
咖啡原本就不是奢侈品，北京咖啡行業協會首任會長季明表示，定價較低的咖啡有益於培育國內市場。國內咖啡市場有很大的發展空間，價格太高是限制咖啡普及的一大因素。</p>
<p>
咖啡原料成本很低，有較高毛利。據一位咖啡從業者介紹，如果僅考慮咖啡豆的成本，一杯咖啡的成本不超過5元錢，按照30元售價計算， 毛利率可達到80%。但季明表示，對於連鎖咖啡來說，房租是第一成本。除了名氣較大的咖啡連鎖店，一般的咖啡廳很難靠賣咖啡賺錢。快餐廳、麪包坊、便利店等場所有其他商品分攤咖啡成本，較低的咖啡定價不難理解。</p>
<p>
在北商研究院方面看來，平價咖啡短期內不會對星巴克等咖啡連鎖形成衝擊，其意義在於開闢新市場。“喜歡喝咖啡的人還是會去星巴克”，一位烘焙企業負責人表示，咖啡銷售對面包坊客流帶動有限，也很難開創新用戶，但能增加用戶黏性。在季明看來，如果平價咖啡能夠對連鎖咖啡店造成衝擊，或也意味着國內咖啡市場的成熟，但這可能還需要5-10年的時間。</p>
