<span style="font-size:16px;">很多時候我們都是沉浸在自我陶醉的喜悅當中，譬如說招牌上斗大的[精品咖啡]四個字，每天開店時就會不自主的抖擻起來，[我都用最好的豆子--](心中暗暗的爽着)(我絕不用那廉價的商業豆)心裏頭另一個聲音像唸咒般的升起， 不斷的自我強化自我催眠。</span></p>

<span style="font-size:16px;">我有一個客人是臺中人在臺北讀書，有一家他回臺中蠻常去的自烘店，那個老闆知道他將要退伍，希望他能跟他共同打拼。 我這個客人覺得他的豆子還有很大的進步空間，就拿了一些他覺得不錯的豆子去給他試。 三個配方豆，第一包他說烘得太黑了我的磨豆機不磨出油的豆子，第二包他說這都是商業豆沒必要試，第三包他看了一下好像是不好意思全部打回票的神情，隨便煮了一下，說這豆子味道不行。</span></p>

<span style="font-size:16px;">我這個客人後來跟我說---我實在不知道如何跟他溝通咖啡豆的質量。 他連我特地帶給他試的都不屑一顧，我能從他那邊學到什麼?</span></p>

<span style="font-size:16px;">在我剛開店的那幾年，臺灣正颳起一陣賽車的熱潮，說賽車也不過是圍起一片空地擺幾個三角錐就飆起來了，士林的廢河道，八仙樂園的停車場都可以是比賽場地。 那時口袋還有幾個錢也弄臺四代三門喜美跟人家組個車隊玩玩，爲了要飆快免不了要改車，怎麼改呢?那時候也沒有改裝廠，幾乎都是換裝流用日規上級車款的零件，參考日本的改裝雜誌就給硬塞進去，那時也不認爲要什麼駕駛技術， 反正油門踩下去跑的贏就好。 接着車隊有人開始換VW-golf，一堆人忽然發現歐洲車比較硬不像日本車軟趴趴的，馬上大家都換玩golf，接着bmw，benz，殺紅了眼大家不斷的往上砸錢。 這時候就不斷的傳來某某人撞車的事故。 後來大家檢討的結果原來是我們只會踩油門，不會踩煞車。 根本駕馭不了那些車子。 接着纔有計劃的練習基本動作。 結果發現喜美是最好的練習車。 好開好上手切彎準，車身輕貼地性高，改裝容易升級空間大，維修便宜---。 當然玩車也把我的週轉金玩掉了，哈哈!</span></p>

<span style="font-size:16px;">那時候改車的人和改裝廠不是一窩蜂的名牌不然就是亂改一通，然後吹一肚子牛皮。 就像現在的精品咖啡。</span></p>

<span style="font-size:16px;">我爲什麼要寫這一段?當初爲了追求高性能，不斷的砸大筆錢改車換車，卻從來沒想到自己根本駕馭不了。 從不斷的發生事故甚至危及自身性命後才體會出自己能力上的不足。</span></p>

<span style="font-size:16px;">那一段瘋狂玩車的歷史就好像現在的精品咖啡的流行---，只見不斷的換裝重裝備，不斷的找尋高價豆-特殊豆，卻從來沒有想到自己根本沒有能力處理。</span></p>

<span style="font-size:16px;">我一個朋友的朋友，花了3-4萬元上了兩個杯測課程，很自豪的宣稱{我已經能夠掌握所有的味道了]。 我另一個朋友陪他試了一下午的咖啡只有一句話[你可不可以穩定一點，不要每次都不一樣]。</span></p>

<span style="font-size:16px;">這次的比賽，他入圍了。 但是您們有沒有發現，領先集團和落後集團差距很大，絕大多數都在420分以下。 跟領先集團有50分以上的差距。 這個差距從非正式的管道得知是在差在espresso上。</span></p>

<span style="font-size:16px;">我這個朋友的朋友，當初在練習的時候，就被我的朋友說[espresso有不好的味道]。 他那上過兩次杯測課的朋友回說---[沒有啊!我覺得很好。 ]結果比賽揭曉後他私下去請教一位認識的評審，那位評審對他說，[你的卡布分數很高，但是espresso有不好的味道。 ]</span></p>

<span style="font-size:16px;">牛奶很重要，可以讓咖啡變得很好喝，甚至可以創造出特殊迷人的香氣，但是那不是咖啡，那是牛奶咖啡。 今天我們講精品咖啡的時候並不包括牛奶。</span></p>

<span style="font-size:16px;">很多玩所謂精品咖啡的人不屑於所謂的商業豆。 就像玩bmw的不屑於玩喜美的。 一直到被喫得死死的纔不得不承認人家不是車比你好，只是技術比你強而已。 當然車很好還是很重要的。 起碼比較安全。 又可以沒事虧人家說[你那是甚麼爛車---哈哈哈]，但我寧願是技術配得起，而不是錢花得起。</span></p>

<span style="font-size:16px;">頂級食材可以使您的產品很有說服力，也可以提升您的技術能力，擴展您的視野，豐富您的味覺。 然而頂級廚師的能力在於可以將一般食材提升到接近頂級食材的水平!頂級食材只是門面而已，是爲了要吸引聚光燈宣傳用的。 真正能展現功力又能賺到錢的是將一般食材處理的不遜於頂級食材的功力。</span></p>
